Winter Salad

About this time of year, as the days are getting noticeably longer and the time change means I've got more light available in the evenings, I start craving fresh food. I haven't used a winter Community Supported Agriculture (CSA) farm share before, but my Strategic Winter Squash Reserve is proof that much of the Fall harvest can be enjoyed months later if properly stored.

I need more than just long-storing root vegetables, though. I crave leaves! When I am lucky to find a farmer growing winter greens I make good use of their produce. This Winter Salad is a tasty way to enjoy some mild cold weather greens like bok choy or spinach. I first got the idea for raw bok choy in a salad thanks to Alanna's lyrical descriptions of her Bok Choy Salad with Creamy Vinaigrette. Young tender small leaves are best for eating raw in salads. Use the more mature larger plants in Fish Tacos or Yakisoba.

As much as I enjoy baking in my kitchen, fixing goodies for my family or something just for me, it's a treat to go out for a snack.  Choosing amongst the variety of offerings in the bakery case is Big Fun for me, and that's how I was inspired to make these muffins.


Our local military spouse group met for coffee at the grocery store down the street.  As previously mentioned, I'm a tea drinker and fancy coffee drinks are just plain lost on me. However, I like the conversation--I always learn something new that makes my life smoother. Military spouses bring a wealth of life experiences to the table, and we're a formidable asset to any community. Recently my fellow spouses have helped me prepare the house for market, and wow what a difference fresh eyes bring to your place!


I was peckish, so I scanned the muffins in the Bakery Case and saw Good (or Better?) Morning Muffins. The muffin was yummy, and got me wondering why I haven't combined my finely shredded Community Supported Agriculture (CSA) farm share carrots into a muffin before. I played around with my key muffin recipe to come up with these, and the result is a whole grain muffin using honey, maple syrup, raisins and dates for sweetness.

I'm not normally one to throw the word "healthy" around, because I believe it can be interpreted in a wide variety of ways and I'm not about to say which way is best--and it's not a One Size Fits All definition anyway. I'm confident in saying that a baked good which tastes as good as these muffins, that doesn't happen to contain refined sugars and does pack in some protein and fiber, is healthy--at least compared to a slice of iced carrot cake that is, and if you're not allergic to the components of the muffin, that is.  And since it's got some of my favorite parts of carrot cake--I'm going with an easily searchable recipe title though I hope I don't prevent myself from making an even carrot cakier type of muffin!

After a month of indulging in my favorite holiday treats, and making my traditional holiday meals, and going out to holiday gatherings, I crave something simple like soup.  Soup that doesn't have lots of cream, that's just made with wholesome ingredients, soup that is going to help me reach my goals of eating more vegetables.

I have a terrible problem of reading recipes but not following them precisely.  I'll get an idea of something I want to make, or I've got stuff from the farm share I need to figure out how to use, so off I go in search of recipes.  I'll look in my cook book stash, my bookmarked recipe files, and surf the internet.  Usually I will find 2 or 3 different ones that look appealing, then cobble together my own creation.  Generally, the result tastes pretty good.

Except for soup.

I have not yet mastered the technique of making soup without a recipe.  Sure, I know how to use good ingredients.  I know to sauté the veggies to get some caramelization at the start.  I know soup is better the next day.  But the seasonings/spices/salting--especially the salt--trips me up.  I'm so afraid of over-salting that my family has gotten used to adding a few grinds from the salt grinder at the table.

This soup is like the Pirate Code:  more of a guideline, really.  The next time I've got a pile of leftover vegetables, and kale, I'll make it in a slightly different way.  Still good, enjoyed with a good bread and a hunk of cheese.  What isn't good, enjoyed with a good bread and a hunk of cheese?  I could eat that morning, noon, and night.

But back to the soup.

Sausage Pasty Meat Pie

With Pi day (March 14, or 3.14) coming up, how about a meat pie? Meat pies make a wonderful dinner and a great leftover lunch. You can combine Community Supported Agriculture (CSA) farm share vegetables with meat into a simple and satisfying vehicle for nourishment.

I did not grow up eating meat pies. My spouse did--in the Upper Peninsula of Michigan where the pasty reigns supreme. Last summer we took the kids on a Lake Michigan Loop (up one side and down the other). We ate pasties in multiple places. Each was different (pasty sliders?!) and nearly all were amazing. [At one tourist place I had a merely 'good' pasty, but the brown gravy served alongside it was a new twist for me, so I considered that visit not a total loss.

This pasty uses pork sausage. It was inspired by my visit to the Runyan family of Oak View Farm Meats where I received a basket of pork products to play with at home, including the pound of pork sage sausage I used in this recipe, and loads of ideas on how to use them. I wanted to make a colorful filling to stand out from the paleness of the sausage, so I grabbed what I had handy--some potatoes from the basement Strategic Winter Squash Reserve--and a package of marked down chopped vegetables from the store. The key is to use finely chopped vegetables so that you have a cohesive filling.

Carrot and Celeriac Fritters or Latkes (Gluten Free)

One of the great things about root vegetables is that they keep such a relatively long time. Just like the Strategic Winter Squash Reserve in the basement (new and improved with white and sweet potato subdivisions!), root vegetables are an excellent resource for folks trying to eat locally grown foods in the winter months. I'm glad to support farmers who offer extended deliveries after the regular Community Supported Agriculture (CSA) farm share season ends, knowing that for the most part I'll get long-storing vegetables that will see me into the new year.

I've got root vegetables filling up my crisper right now. After the local apples vanished (sad face there, there's nothing like a local apple in terms of flavor) I'd usually transition to crispers full of citrus fruit from the Band Fruit Fundraiser. But seasons change, and your kid who has been in band throughout high school moves on to college where you get to write big checks and not get a case of tangelos in return. So no citrus--right now I've got glorious carrots from the farm share packed into my crisper.

I'm always looking to add vegetables into baked goods. I think they add moisture, flavor, and nutrition to my family's table. Muffins are an easy delivery method because they assemble and bake so quickly. My kids are happy to eat muffins for breakfast and for an after school snack. For this month's Muffin Monday, I bring you a recipe that is both festive--with the bits of red dried cranberries and green pistachios. This recipe is elevated above my usual muffin because of the sweet cream cheese filling tucked inside, but it's still on the healthier side because I don't really want to send my kids off to school with a bunch of chocolate frosted sugar bombs in their bellies.

I got the idea for this muffin thanks to my daughter. We were walking the dog herd down to the local grocery store to buy a gallon of milk. [This is a bonus fitness and economic tip--over a year ago I started walking a mile to the store if the only item on the list was milk. It saves on impulse purchases and the dogs and I get a bit of exercise.] I left her with the dogs and went inside to shop, calling over my shoulder 'do we need anything else?' as an afterthought.  She requested a Killer Brownie. It got me thinking that I could use a treat, too. Since I was in the bakery buying the brownie anyway, I turned to the muffin case. This was the site of the Good Morning Muffin that inspired my Healthy {No Sugar} Carrot Cake Muffins. I was delighted to see a new version of the Good Morning Muffin with sweetened cream cheese in the center and decided that would be my splurge. After we got back home we enjoyed a snack of milk & baked goods and I put my thinking toque on. [That's a Bob & Doug McKenzie and Great White North reference, not some kind of chef thing.]

I made two batches of these muffins, trying different ways to include the sweetened cream cheese filling. The first way, shown below, was to scoop the usual amount of muffin batter into the prepared cup, then use a small spoon to create some space and spoon in the sweetened cream cheese. This technique did not turn out well. The cream cheese oozed out onto my pan and the muffins were hard to serve in a mounded heap because the cream cheese on the top of them was sticking to anything that landed atop it. The second effort worked better--I used a smaller scoop to put in about half the amount of batter, then spooned in the cream cheese and topped with the other half of the batter.

Carrots are unsung vegetables. They can hang out in the crisper drawer for weeks before supporting soup stocks or transferring hummus into my face. They are one of the innocuous vegetables to encourage picky kids to eat. Rarely do they get a moment in the spotlight. A few years ago I noticed I'd amassed a bunch of bags of carrots from the Community Supported Agriculture (CSA) farm share, so I celebrated HashtagCarrotWeek and shared a variety of recipes using carrots (breakfast through dinner).

When I got a particularly uniform group of carrots from the farm share, along with yet another bunch of fresh dill, I decided to combine the two in a roasted side dish. Ok, truthfully I tossed in some French breakfast radishes to the roasting pan as well, but this post is about the carrots because they really shined with this treatment. My dad is getting more out of the weekly bunches of radishes, eaten on buttered bread, so I'll leave those to him.



I think these carrots would be a terrific holiday side dish. Since I used olive oil they are vegan, and would be useful if you need a side dish for a crowd of eaters of varying styles. I served mine with roast pork covered in a yogurt/mustard/dill sauce, a quickie version of my Make Ahead Mashed Potato Casserole (with fresh dill added) and the dill on dill action worked nicely. Today I want to talk about maximizing time.


Do you bring reading material, knitting, or your laptop with you when you know you'll be sitting and waiting somewhere? I do--either my Kindle at the doctor's office, or my knitting in the car, or my laptop while waiting for my daughter's sewing class. I like to be prepared when I know I'll be stuck somewhere for a while.


It's amazing how much focused effort I can accomplish toward a task when I am free of the distractions of laundry, the dogs wanting out (and in and out and in and out and in), or the lure of social media.


This recipe came about precisely because I was stuck without preplanned waiting materials. We'd dropped the car off for routine maintenance first thing in the morning and decided to swing by the dealership eight hours later, en route home from an errand.


The car wasn't ready.

I find the start of each Community Supported Agriculture (CSA) farm share season to be rife with promise. We'll have high expectations to eat ALL THE THINGS and then get bogged down in sheer volume of vegetables.


What helps me the most is to have a few 'go to' methods to deal with different types of produce. For example, when I'm overwhelmed with greens I know I can whip up a Fast Greens & Pasta dish to use up a large bunch in a way my family will enjoy.


I shared last week how I turn to my grill, in the summer, or to my roasting pan (in the Fall when I'm not worried about heating up my house too much) to turn root vegetables into building blocks for future meals.

Today I'd like to share another method--fritters.  I like to fritter away my time in the kitchen. It's much more productive than frittering away my time on Facebook, and the results are far tastier. I've shared several recipes for shredding vegetables to make vegetable pancakes or fritters. One summer standby (that you can make off season if you shred and freeze your summer squash) is my Zucchini Pancake recipe. I've shared a previous plain Turnip Fritter recipe here. I've even waffled up some St Patrick's Day leftovers in my Corned Beef Hash Brown Waffles.

One of my favorite subjects is food. No surprise there. When I meet someone new, especially someone whose people did not grow up a stove's throw from where we are chatting, I like to ask about favorite foods. 

If you've lived in places far different from where you grew up, I'll ask you about what foods you  remember from your time away. I'm deliberately avoiding use of the term 'exotic' here, because Arkansas and Louisiana are as exotic to me as British Columbia and Nepal.

As I chat with folks about food, I find I am more interested in those comfort foods that we crave, not Your Most Memorable Meal [unless it was memorable because of the warm feelings evoked of good company and good flavors--not dramatic showmanship].

This comforting side dish came about because of a conversation with the guy doing routine maintenance on my furnace. He's from England, living and working as an HVAC technician in the US, and when I brought up what foods he misses most, he said his mom's celeriac mash. He described it as a simple dish of celeriac, potatoes, and carrots. Mashed together with a bit of butter and cream.

I had a Community Supported Agriculture (CSA) farm share celeriac in the crisper and decided to make this for my family. It is simple, homey, humble, unassuming--an excellent addition to a plate of food. Taken by itself it could be considered boring to some, but I don't need my food to be always in my face. This was a nice companion to roasted chicken. It would be terrific in an array of Thanksgiving sides. Leftovers would make a nice crust for an egg casserole, like my Hatch Chile, Egg and Potato Casserole.

Colorful Chard and Chicken Stir Fry--a Concept Recipe for Stir Fries

One of the most common ways I use the Community Supported Agriculture (CSA) farm share to fix supper for the family rarely appears here--a simple stir fry. Stir fries in my kitchen are one skillet meals into which I try to cram as many stray vegetables as possible. I'm not getting fancy with seasonings or sauces, it's just basic food that gets vegetables out of the farm share crate and into our family. I happened to get some photos of one, a rare occurrence, so I'm sharing the idea today.
Last week I made a stir fry using up dribs and drabs of what was available, no photos or anything, and got raves from the menfolk [my daughter was off in Canada pouring maple syrup onto pea soup in a sugar shack. And practicing French]. I was kicking myself for not documenting how I'd made it, so I'll be making that one again, deliberately. It had bok choy, smoked sausage, spring onions and roasted potatoes.

A few Notes:

  • When I make a stir fry using the quick cooking greens from the farm share [Swiss chard, bok choy, tatsoi, pak choy, spinach, cabbages--NOT turnip greens, mustard greens, or kale in this case] I separate the leaves from their stems, chop the stems up, and cook the stems first with the onions.


  • If I've got root vegetables to use I'll shred or finely dice them and add in along with the onions and stems.


  • I typically include a protein in my stir fries--a chopped chicken breast or two, some ground meat, scrambled eggs or a fried egg on top. A piece of diced chorizo or smoked sausage provides a ton of flavor with very little effort.


  • We usually have a starch with our stir fries. This is typically rice, but can also be potatoes, tortillas, Chinese pancakes (boughten** Mu Shu wrappers), bulgur or couscous. If you're going to have a separate starch like rice, make sure to start that first so it's ready.

I love reading how Pa built a house using boughten boards and a boughten door. I buy my mu shu wrappers in the freezer section of Asian grocery stores.

Make and Take Smoothies for Moms

Motherhood equals nurturing (no, you don't have to have created/raised offspring to read on--we've all had moms). One way folks nurture is via food [hello, nurture and nutrition share the same root].
Taking meals to a new mom is one way of nurturing the new family as they become a unit. Taking a meal to a mom after her 6th kid is just plain nurturing for her [though watching the kids and doing her laundry so she can get a massage is even better but doesn't fit with my theme for today's recipe].

What about other folks who need nurturing? A busy friend caring for aging parents? A neighbor caring for his ailing wife? Someone recovering from oral surgery? It's the last situation that inspired today's post, but the more I though about it the more I think this concept would work for a variety of circumstances.

Smoothies keep for several days, and it's easy to scale up a recipe to make an extra portion. With that in mind, when I found out my friend wouldn't be eating solid food for quite some time after her tonsillectomy, I offered to bring her some smoothies. I was going to be near her home on post-op day #5 and that seemed like a good time to deliver as she'd be coming out of the initial post-op haze.

This blog is about how I'm feeding my family from our Community Supported Agriculture (CSA) farm share to encourage you to try a farm share in your town. Typically the recipes I share are uncomplicated and use ingredients and tools found in regular stores. The food is generally nutritious, filling, and uses up items from the farm share box--but it's not usually fancy pants type food.

As often as I am embarrassed by the many iterations of brown food or fast & easy food on this blog, every once in a while I'm really proud of taking the time to create something pretty using the produce from our farm share. Today's recipe is more elevated compared to my standard fare. This is a terrific Spring/early summer seasonal sushi roll, and since the tantalizing glimpse of sunshine and warmth has me [and the dogs] wanting to lie on the brown grass in the back yard and dream of summer days, I'm sharing it now.

In addition to being a fan of eating from the farm share, I'm also a pretty frugal cook. Since my spouse and I can eat our ages in sushi--and the kids could probably exceed our consumption--it makes sense to roll our own and have sushi at home.  Just like with pizza, something that we like to eat often but don't like to shell out $$ for, sushi at home can be a wonderfully special meal.

I learned to make my own sushi while in my early 20's, living in Washington, DC. I've got a sushi 101 tutorial from the first month of this blog for reference--you can see it here. If you are a hands on learner, I would recommend taking a class. It's fun to learn along with other folks and you can get immediate answers to your questions. I've seen sushi-making classes offered at community centers, grocery stores and kitchenware stores. If you're interested, find a class and try it--then branch out on your own. There's no rule that says you need raw fish to have sushi, you just need a willingness to experiment and some raw materials!

The first summer we spent in the midwest we ate at a country buffet restaurant. It was a new experience for all of us. My son earned a coupon from a summer reading program so we explored our new environment through food. My kids had never seen long grain rice and were mystified that you could eat rice with butter, not soy sauce.
[After being stationed in both Japan and Hawaii, and learning how to make my own sushi even before joining the military, I'd forgotten all about long grain rice. Our staple rice, cooked in the rice cooker because I'd burn it any other way, is yellow bag calrose or hinode rice.

This recipe is not some wow amazeballs novel innovative dish. It's just a simple way, when you're looking at a pile of vegetables from the community supported agriculture (CSA) farm share, to get those veggies out of your refrigerator and into your family. We ate it as a side dish with ham. I stirred chicken chunks and bok choy into a batch. My kids ate bowls as an after school snack [it is a Costco-sized container of rice after all].

Ham and Turnip Stew

Ready in about half an hour, this tasty stew has turnips and carrots simmered with a meaty ham bone.

I appreciate the readers on my Facebook page!  I couldn't decide which recipes to post this week and posted a list of options. Sandy chose this recipe, so here it is! I apologize for the poor quality photos--I expected this would make a leftover that I could photograph for lunch in natural light, but we cleaned the pot out. You're getting a quick pic that was snapped at our dinner table.  Simon thought it smelled delicious as well.

I've been on a mission to use what I've got in the fridge, freezer, and pantry lately. One of the issues with hating to waste food is the accumulation of items. For example, if we eat ham for dinner, we'll enjoy the leftovers in sandwiches, quesadillas, meatballs and/or pizza. There's usually still a chunk of ham left and we're hammed out, so into the freezer it goes. Ditto the ham bone. Normally I'll make {No Salt Added} Ham & Bean Soup with the bone, but I found a spare ham bone while rooting around in the freezer [I know, everyone should be so lucky].

On a whim, and why there are no 'ingredient' or 'process' photos, I grabbed some of the ubiquitous turniips from the crisper and made a quick stew. Turnips are one of the cool season crops that grow really well for our Community Supported Agriculture (CSA) farmers, so we get a bunch when they are in season. The saltiness of the ham bone plays nicely with the sweet turnips and this stew was gobbled up. I'm remembering this one for Fall, since I'm always looking for ways to enjoy turnips.

Ham Ball and Black Eyed Pea Chirashi Rice

Continuing to upcycle a holiday ham, this time into New Year's good luck, while getting folks to eat a wide variety of vegetables as well.

I am not a nutritionist nor much of an advice giver--but in my 8 years of experience with Community Supported Agriculture (CSA) farm share and 16 years of experience with, shall we say reluctant vegetable eaters [because if the child won't eat any type of vegetable, well, that's not a picky eater--you have to pick something in order to be picky, you know?] . . . .

This has been such a run on sentence I've lost the point. Let me sum up.

If you have a wide variety of vegetables in your house, you are more likely to include a wide variety of vegetables in your meals. If you include a wide variety of vegetables in your meals, the folks eating your meals will ingest a wide variety of vegetables. Because we joined a CSA, my kids eat a wide variety of vegetables.
It's a bold statement--but if I'd served this recipe to my kids before we joined a CSA, or in the early couple of years, they probably would have picked out the ham balls and the rice and left the rest. Sure, while they've spent the last 8 years eating from the farm share they've also been growing up--that happens--but the unrelenting exposure to a wide variety of vegetables is the foundation of the change. Extrapolating from the end of season survey, we got more than 40 different vegetables over the course of the 20 weeks.  That's a wide variety, and more than I would have bought had it been up to me (ahem, mustard greens, turnips, and beets I'm talking to you!).

This recipe is a great example of how having extra vegetables on hand means I'll add more veggies to our meals. Eating my colors makes me happy. Combining tasty food with colorful piles of vegetables is a terrific way to eat a variety of colors. I wouldn't normally say that chicken salad is a colorful dish, but when you serve it with gorgeous vegetables, well, even on a white plate this would still be a riot of color.

Surimi Chirashi Sushi with Summer Vegetables

When it's hot out, my body craves lighter food. Eating seasonally, the kitchen pendulum swings [yeah, there's a pendulum swinging in my kitchen. that's why it's a mess all the time!] from hearty chili, stew, or casseroles over to simply seasoned piles of pretty vegetables.  Making a chirashi sushi is one way to keep it cool in the hot weather. Chirashi sushi means scattered sushi, which means I get to be lazy all the flavors without all the fuss of rolling your own.
I love to roll my own sushi, don't get me wrong. The other day I made a bunch of pretty, and tasty, Egg, Kohlrabi and Carrot rolls. Taking a page from Fusian we put panko over top and the flavor/texture contrast was really neat.

When I've got kohlrabi or cucumber I will make up a big bowl of chirashi sushi. If I've got salmon I'll add that, or Spam, Surimi, or just scrambled eggs rolled up in an omelette. My friend Lasar introduced me not only to chirashi sushi but also to the furikake my son and I sprinkle on top. [My spouse and daughter don't care for furikake, so I list it as optional below.]

This keeps for a couple of days and can be reheated gently in the microwave. I store the cucumbers/kohlrabi separate because I like them cool and crunchy.

Kalua Pig Summer Rolls with Kohlrabi, Carrots and Pineapple

Kalua pig combined with shredded kohlrabi and carrots in a rice paper wrapped roll, sweetened with a bit of pineapple for an Island style meal. Yes, this is another way to eat that Community Supported Agriculture (CSA) farm share kohlrabi!

Kohlrabi disclaimers aside, this is also a wonderful way to enjoy some Hawaiian flavors while keeping your house reasonably cool.  Sure sure, you've got an imu [underground pit oven] in the backyard for your monthly luau . . . or perhaps like me you don't.


Kalua pig cooks easily in the slow cooker [please not I said easily, not quickly--if you don't have Kalua pig already cooked you'll need to start this a day early]--but since making Kalua pig means you'll make a whole bunch of meat, it's delightful that the leftovers freeze well [add some pan juices to the container].

While we lived in Hawaii we enjoyed Kalua pig with sautéed cabbage, '2 scoop rice', and pineapple chunks.  I decided to create a summer roll that combined many of the same elements, but in a cool and tidy* package.  I used shredded raw kohlrabi instead of sautéed cabbage, rice paper wrappers in lieu of rice, added in some shredded carrot for color, and tucked the pineapple inside.


This is a terrific hot weather meal--packed with vegetables and quite satisfying--keeping my kitchen cool.  It travels well in a chilled bag, too, for summer picnics.

Chinese Cabbage and Chicken Roll Ups

This is a good meal to fix if you're serving non-meat eaters as well as meat eaters, as the chicken is cooked separately and could even be left out altogether.


I could call this a faux Mu Shu style dish but I really don't want the Mu Shu Police on my case, so let's just go with this title.  I had a lovely Chinese cabbage, carrots, and onions from the Community Supported Agriculture (CSA) farm share.  Ground chicken was marked down, and I'd made a trip to the CAM International market because was sled hockey season.

When you have nearly all the ingredients for a Mu Shu, why not make something close to it?  To make this Fast from the Farm Share I opted to have 2 skillets going, but if you'd prefer to do fewer dishes and have more time to spend making dinner, have at it.
