Instant Pot Taco Rice

This comfort food combines taco-seasoned meat with cooked rice and salsa in a hearty bowl of family-friendly food. This recipe is great to serve a crowd, too. Use the Instant Pot for easy clean up!

This is not a pressure cooker recipe, but I am including it in my Instant Pot on Campus series for a couple of reasons. First, this recipe is a family favorite which my son has cooked on the stovetop many times under my tutelage. I'm posting it on my website so that he can access it without sending me texts at 10:49pm asking how to make it.

Second, using the Sauté function on the Instant Pot or Mealthy (or Brown on the Presto) makes your electric pressure cooker function like a high-sided electric skillet. When I make this dish in my 12 inch cast iron skillet I inevitably fling some of the contents all over the stovetop as I'm stirring. That results in a thorough cleaning not only of the skillet but also of the stove. Using the Instant Pot to cook this meal saves clean up!


The third reason I'm sharing this is because I think that electric pressure cookers are hidden gems for disabled cooks. Instead of having to strain to access a stovetop to brown meat--or pay to modify the stove height--cooks can position the electric pressure cooker on a convenient flat surface and work in comfort. Wear an apron and mind the splatters, though.

Healthy Apple Cider Muffins for #MuffinMonday

Apple cider and nutmeg-spiced whole grain baked treats covered with cinnamon sugar are a lightened-up version of the popular fall donut.

Eating with the seasons means that change is constant. Come to think of it, being a military spouse means the same thing. Being a parent means the same thing--once you get a handle on one age, growth and development means your newfound knowledge is sorely lacking. Again. Heck, I guess being human means that change is constant. I'm getting off track.

This website focuses on using seasonal produce, and it's Fall, so we're talking apples, apple cider, buttercup and butternut squash, and that's just the start of the alphabet. As the seasons change so does the offerings in the Community Supported Agriculture (CSA) farm share and at the farmer's market. Just like my dogs warmly greet me even if I just ran upstairs for a pair of socks, I warmly greet the arrival of each new season (although with considerably less tail wagging).

Pot Luck Tabbouleh with Feta and How to Chop a Lot of Herbs Easily

Feed a crowd at a summer gathering with this vegetarian salad that shows off the flavors of summer. Packed with herbs, tomatoes, cucumber, feta, and chewy bulgur wheat grains lightly coated with lemon juice and olive oil this side dish can sit on a buffet table and keep its flavor.

Normally I'm just cooking for our family of four so when I go bigger with a recipe that works for a crowd, and also uses the produce from the Community Supported Agriculture (CSA) farm share, I want to share with the rest of the class. I've done it before with my Pot Luck Asian Chicken Cabbage Salad.

The First Tomato of Summer [yes, worthy of capitalization if you're like me and just don't buy fresh tomatoes November through June] needs something worthy to celebrate its arrival [then you can move on to the weekly Summer Tomato Sandwich]. I'd been eying my unruly mint patch and craving tabbouleh--oh, my mommy pronounces it tah-BOO-lee so that's what I say--so I picked up a package of bulgur and gathered my goodies. I followed the directions on the package and used Bob's Red Mill Red Bulgur (Amazon affiliate link). No sponsorship--I tell you the brand name because the recipe I started with came from the back of the package and because I'd never tried red bulgur before. Usually I buy it in bulk somewhere, and since I know the company name I thought I'd share. The product did work great, though, if you're looking for bulgur. I picked mine up at the grocery store down the street.

That tabbouleh was all I'd hoped for--bright and fresh with all the herbs, tangy but not gloppy from the dressing, crunchy from the cucumber, chewy and filling from the wheat. Plus the flavor of a local tomato picked when ripe and grown for flavor, not travel ability. /rant.

After the success of that tabbouleh I thought it would be good with feta, and with loads of herbs still to use I was looking for an excuse a reason to make more. Lots more. Cue marching band camp--filled with hungry teens, who arrived promptly at 11:30 each day and, like polite locusts, left the serving area decimated 10 minutes later. The band has both vegetarians and kids with sophisticated taste, as well as my kid (I shouldn't rag on him, but he's delighted with leftover concession stand hot dogs . . .). I knew it would not be ignored. One musician came back for seconds 3 times! That's probably not called seconds, but you know what I mean.

Potluck Asian Chicken Cabbage Salad

Chicken, cabbage and salad greens tossed with an easy Asian dressing. Almonds, radishes, and ramen provide a crunchy contrast to this pot luck salad.

I had cabbage and radishes aplenty when informed of the impending opportunity to use up farm share veggies pot luck. Following my tip to stick with the familiar, from my post Five Tips to Feed Your Family From the Farm Share, I decided to make a chicken & cabbage salad with an Asian dressing. The guests did not include vegetarians or folks with nut allergies, so I felt comfortable making my usual recipe which comes from the Better Homes & Gardens New Cookbook (Amazon affiliate link).

I've tweaked this recipe in a few ways, shown below. First off, I added salad greens since I'm serving a crowd. Second, I added radishes since I had some, I thought they'd look pretty, and the extra crunch would go well. Third, I used seasoned rice vinegar (the kind I use for my sushi rice) and, since that is sweetened, I omit the sugar. I double the dressing since it's so good--and so easy to make. Method-wise, I change the recipe by tossing the chicken-cabbage mixture with the dressing and let it hang out for a few hours. Then I toss the whole lot together with a bit more dressing and it's ready to serve.

If I were planning to take this to work for a lunchtime pot luck, I'd cook the chicken, toast the ramen & almonds, make the dressing and chop all the vegetables the night before. In the morning I'd combine the chicken, cabbage & some of the dressing in one container, the salad greens, radishes, and green onions in another, and the ramen and almonds in a third container. At serving time I'd [carefully] toss everything together with more dressing in a large bowl or serving tray, top with ramen and almonds, and serve with extra dressing on the side.

Slow Cooker Apple Chai for a Crowd (or Yourself)

In an online food blogger group we've been discussing recipe testing. From cookbook author/bloggers to 'here's what I ate today' bloggers, everyone has an opinion and we're not afraid to share it! It's been an interesting discussion.

With a recipe posting schedule of Monday, Wednesday and Friday (12 to 13 posts/month) I've got flexibility in what I choose to post. Let's take the past 24 hours as an example. I hosted a book group in my house yesterday and served Asian Pear Cardamom Cream Muffins, Asian Pear & Pear Butter Soaked Oat Muffins, Sweet Potato, Turkey Sausage & Gouda Breakfast Casserole, Sweet Potato, Hatch Chile, Cornbread & Queso Breakfast Casserole, sliced apples with Apple Cream Cheese Toffee Dip, and Slow Cooker Apple Chai.  Are the recipes on the blog yet? Um, no! I just got the dishes done! The rest will appear when it's seasonal [Hatch chiles in August, and when do Asian pears appear in the stores?].
That's 6 recipes, or 2 weeks worth of blog posts [and about 6-7 hours of food preparation, 81 photos that need to be edited, 3 sinks full of dishes to be hand washed, an additional dishwasher load, 2 extra trips to the grocery store, and plenty of writing and typing as that's part of my process. Though if we're talking hours, I started thinking about what vegetables from our Community Supported Agriculture (CSA) farm share I'd have to use up--and what would go over best with my guests--about a week ago and mentally walked though the muffins and casseroles a few times before picking up a knife. I've been hacking at just this post all afternoon/evening, too, in between band fruit fundraiser captain meetings and AFO fittings, and in lieu of reading a book or watching TV. We all make choices on how to spend our 24 hours, and this is how I choose to spend mine].

The recipes that I share on this blog are what my family [and my book group, and my coworkers, and the high school marching band] eats each week. If it works and I have good notes on ingredient amounts and cook time, I won't make it again. [I mean, while we enjoyed Beef Tongue Nachos and Caramel Toffee Apple Parfaits I'm not going to serve them 4 times just to make sure the first 3 weren't flukes.] If a recipe doesn't work--it doesn't appear on this blog. Period. Failure photos do make it to my FB page, however. We're all human--except the spambots. Sometimes I'll need to tweak things a bit, like I did with the Double Chocolate Raspberry Muffins. Sometimes the recipe testing can go too far and I just need to stop the madness and put it on the blog already.

Very Veggie Sloppy Joes for a Crowd

Sloppy joes are a kid-friendly meal. Add finely shredded vegetables to the beef and you'll be boosting the nutrition of this crowd favorite!

I went through a long stretch of adulthood without eating sloppy joes.  All Lunch Lady joking aside, I have no idea why that was.  I like my joes.  That long stretch was finally broken one lunchtime when a bunch of moms gathered with their kids at my friend Miho's house.  She served a big pot of sloppy joes and all of a sudden I remembered loving them as a kid.  My kids tried them for the first time and thought they were pretty tasty.  I started making them for my family, and I'm pleased I can stretch a pound of ground meat into multiple meals.


When I signed up to bring lunch at the thrift shop, I wanted to make something that would appeal to a variety of meat eaters (I knew there were no vegetarians that day).  I also wanted something with veggies, and something that could sit in a crock pot unattended all morning while I was busy out front.  Very Veggie Sloppy Joes fit the bill.  I fixed this the afternoon before and brought my crock pot and rice cooker in to the store to provide everyone with options*.

*I am all about the options, I realize.  Even the composting pigs get a choice of sleeping compartment each night when we put the Pigloo, the Woodland Hideaway, and the SnackShack into their cage.  Two pigs, three bedrooms.  Back to the topic at hand.

My friend Cathy mentioned that her family enjoys the Pioneer Woman's sloppy joe recipe, so I used that as a jumping off point for this recipe, but added more veggies since I've put them up from my CSA farm share.  We like our first round of joes on buns, with a slice of cheese and a squirt of yellow mustard.  The leftovers get served over rice, with an optional cheese slice sandwiched between the joe and the rice.  My kids enjoy this in a thermos at school, or come home for lunch and eat it here.
