Red Pork and Cabbage with Beets

A one skillet meal of sautéed red vegetables--beets, cabbage, and radishes--with a bit of pork for protein. I nicknamed this low carb grain free meal Red Power Dish.

It's interesting how my consumption of the news has changed. I remember when I was a kid Sunday morning was for piling up on my folks' bed and reading the paper. Primarily I read the Sunday comic section and accompanying magazine. I don't think I paid any attention to the daily paper the rest of the week, unless I had a project for school.

Mardi Gras Fried Rice {Fried Rice with Purple Cabbage, Ham, Egg and Zucchini}

The colors of Mardi Gras in a fried rice--red cabbage, eggs and zucchini (with or without ham)--make this savory seasonal dish a colorful way to let the good times roll.
Why do Mardi Gras recipes have to involve pancakes or King cake? Can't we have some savory entrees alongside? I'm pretty sure the carbs and protein would help with alcohol consumption.

Howdy! I'm feeling a little sheepish here because if you subscribe via email [hey thanks!--if you don't, there's a widget along the right sidebar that makes it easy to do so] you'll know I messed up yesterday. See, I'm only sharing 3 recipes a week, but I'm cooking for the family, the team, the folks at work, and others all. the. time.  Any given week I've got a bunch more than 3 recipes that have the potential to be blog-worthy. These recipes pile up in notebooks and on scraps of paper. The photos pile up--in a well-organized fashion--in my laptop. Eventually I get around to typing them up for the blog, and when I do I tentatively schedule them for when they'd be appropriate. I've got a small butternut squash & spinach lasagna  recipe from last year that I thought would be good for February. I scheduled it for 2/1/2015 thinking that I'd sort out which Monday, Wednesday, or Friday would be best and get the post all buffed and shined [i.e., add photos and the sort of writing you're reading now].

Except I didn't realize that yesterday was February 1st, and there I was at Costco taking photos of my spouse while he tried on new eyeglass frames. [Ya know, if you need to wear glasses it's really hard to tell what you'd look like in new frames since you can't see out of them while you're trying them on . . . where was I?] Oh, right--so while I was at Costco the partially finished lasagna post automatically published, per the scheduling I did last year, and went out on email. I came home from the store to emails from my mom and Alanna notifying me. Whoops.

Now the cool thing of this very long and involved rambling is that Alanna taught me how to save all my partially finished posts as drafts, so theoretically this type of thing will never happen again. But I'd still appreciate it if you'd sign up to get the blog via email, because everyone likes bloopers now and again.

Red Cabbage, Leek, Brat and Beet Skillet Supper

A hearty satisfying skillet supper of cabbage, leeks, apples, and beets seasoned with bratwurst, maple syrup, apple cider and spices. I could say 'low carb' and 'real' if you like those words.

If you're a regular visitor to the blog [thank you!] you know all about the Strategic Winter Squash Reserve in a cold corner of my breakfast nook.  That's where I store the pumpkins, acorn squash, butternut and buttercup squash from the Fall farm share, as well as the shorter-storing onions, potatoes, garlic and sweet potatoes. Corn gets blanched and frozen, summer squash and carrots get shredded and frozen, and beets get roasted and frozen. Turnips just get refrigerated until my spouse convinces me to make pasties again. This way I feed my family from our Community Supported Agriculture (CSA) farm share twelve months of the year, even though we only get fresh vegetables seven months of the year.**

Even though I enjoyed a week of sunshine in Florida, last week during HashtagOrangeWeek, winter has its grip on my home and I still want crave hearty fare. This recipe is a hearty skillet supper combining many of the items in a typical Fall CSA share that can be found throughout the winter.  I was inspired by this CSA Cookoff segment done by Jennifer of Homegrown.org. I thought it would be a great way to stuff beets a bunch of veggies and a sprinkle of meat into my kids.  Score!  Today I'll share a skillet full of flavor we affectionally dubbed Hot Pink Mess.
Boy, if I were a young hip blogger, this would be the name of some over-the-top decadent dessert or fried appetizer that I'd make and eat after stumbling home in the wee hours. In reality, a humble fried egg sandwich appeals to me in the wee hours, more so than chocolate. Though Meghan's granola comes a close second for nighttime snacks.

Orange Teriyaki Slaw Stir Fry with Orange Sriracha Turkey Meatballs

A colorful, flavorful, stir fry of red cabbage, carrot, celery and onion in a fresh orange and teriyaki sauce.  Served with orange-ginger-sriracha turkey meatballs and rice.

This is another Fast from the Farm Share meal, combining Band Fruit Fundraiser oranges and cool weather vegetables in an Asian-inspired stir fry.  Because I had it, I baked ground turkey meatballs flavored with orange, ginger, and sriracha separately and added them at the end, but this orange-sauced stir fry would be terrific as a side with a different protein source.

Working on the savory orange recipes section of my Fall and Winter Fruit Recipe Round Up gave me a hankering for Asian-influenced orange recipes.  Since I like to use what I've got, I opened the fridge and chose a red cabbage, a fat carrot, and the last of the celery for this stir fry.  It's pretty much slaw ingredients--seasoned differently and stir fried. I used ground turkey for the same reason--and because the idea of having my daughter mix, shape, and bake the meatballs appealed to me after a day of hauling fruit in and out of vehicles.

I don't have a juicer--but I have a blender, so I tossed the peeled orange and all of the sauce ingredients into the blender and made quick work of the sauce.  Getting the rice going first, and baking the meatballs while working on the stir fry, means that this meal comes together very quickly.
