I think this pizza would be better prepar...Hi Anon! I think this pizza would be better prepared right before baking. You could certainly slice the mozzarella, drain & chop the artichokes, cook & chop the eggplant, and flatten the sausage a day or so before you bake and store all the components separately in the fridge until you're ready to bake.<br />If you really needed to take it almost all the way--I think I'd line the skillet with parchment paper, spread the dough across that, and assemble the pizza up to the point of topping the dough with cheese, veggies, and sausage. <br />Then lift the parchment out of the skillet and store that in the fridge (I'm not sure why I feel this way, but I don't think having a cast iron skillet in the fridge is a good idea). Then when you're ready to bake, preheat the oven, oil the skillet, transfer the topped dough to the skillet, removing the parchment paper as you do so, and then top with sauce and remaining cheese. Then bake.
