How's it going? I wanted to share this recipe with you because it's been a big hit in some of my recent classes and seemed like a good idea to share with everyone via the website.</p><h3 style="text-align: left;">Where do you find Instant Pot recipes?</h3><p><br />I like to check out cookbooks from my local library. It broadens my knowledge in a subject (pressure cooker recipes, plant-based cooking, bread baking, etc) without having to commit to a cookbook or spend hours searching the internet. Over the years I've done this, certain cookbook authors deliver consistently good recipes, and Coco Morante is one consistently good cookbook author.</p><p>I found this recipe in <a href="https://amzn.to/48u3HUP" target="_blank">Coco Morante's Essential Instant Pot Cookbook</a> (Amazon affiliate link) while I was looking for a dessert to bring to a family with a new addition, being mindful of the new mom's gluten- and dairy-free preferences.<br /><br /></p><h3 style="text-align: left;">Is this rice pudding recipe dairy free?</h3><br />You betcha this is dairy free! This recipe calls for a can of coconut milk so it is completely dairy free. Even though I haven't tried them, other plant-based milks--like oat milk, nut milk, or soy milk--may also work in this recipe--but then you couldn't call it <i><b>Coconut</b></i> Chai Rice Pudding now, could you?<br /><br /><h3 style="text-align: left;">Is this dessert gluten free?</h3><br />You betcha this rice pudding is gluten free! If you choose to add any grain blends (<a href="https://youtu.be/GuEq_emavPI" target="_blank">like the 6 grain blend I demonstrate in the video</a>) check to see that the grain blend you're choosing is gluten free. The 6 grain blend I'm using contains barley, which does contain gluten, so I would not advise using it for someone avoiding gluten. If you'd like to avoid gluten and still add some interest to your Coconut Chai Rice Pudding, try adding a few tablespoons of red or black rice, or wild rice, into the measuring cup before filling it up with medium grain rice.<br /><br /><h3 style="text-align: left;">Is this rice pudding vegan?</h3><p></p><p>No, this recipe is not vegan because it calls for 2 eggs. I have not tried it using egg replacer instead of eggs. I would suggest checking out <a href="https://amzn.to/42TQ28p" target="_blank">Coco Morante's Vegan Instant Pot Cookbook</a> (Amazon affiliate link) for vegan dessert recipes that are made in a pressure cooker.<br /><br /></p><h3 style="text-align: left;">What equipment do I need to make Coconut Chai Rice Pudding?</h3><p></p><p>In addition to an electric pressure cooker, you will need a blender or immersion blender, a spatula, a whisk, a can opener, and measuring cups/spoons to make this recipe. If you really feel up to the arm workout, you may be able to skip the blender and just whisk the heck out of the can of coconut milk + eggs. You do you.</p><h3 style="text-align: left;">What ingredients do I need to make Coconut Chai Rice Pudding?</h3><p>To make Coconut Chai Rice Pudding you'll need medium grain rice, canned coconut milk, eggs, spices, salt, and sugar. I like to use unsweetened brewed chai (tea) to cook my rice, but if you don't have brewed tea it's fine to use water.</p><p><br /></p><h3 style="text-align: left;">How do you make Chai in the Instant Pot?</h3><div>I am a fiend for iced chai year round--even during a Minnesota blizzard! Since I'm also a person who likes to save money, I brew my own chai. I start with a half gallon jar to make sun chai, then I re-use the tea bags in the pressure cooker to make another 1½ gallons of chai. <a href="https://www.farmfreshfeasts.com/2015/06/dos-and-donts-of-diy-iced-chai-tea.html" target="_blank">I wrote up my DIY Iced Chai post here</a>.</div><h3 style="text-align: left;">What spices could I substitute in this rice pudding recipe?</h3><br />This Coconut Chai Rice Pudding recipe calls for ground ginger, cinnamon, cardamom, turmeric, and black pepper. As long as the total amount of spices stays the same (1¾ teaspoons of ground spices) please feel free to substitute other spices that you'd prefer--maybe allspice, baking spice, or nutmeg for some of the cardamom or cinnamon?<br /><br /><h3 style="text-align: left;">Can I see you demonstrate how to make Coconut Chai Rice Pudding?</h3><br />Yeah sure, you betcha! <span itemprop="ingredients">1/2 cup sugar</span><br />

<strong>Instructions:</strong><span class="recipe-schema-instructions" itemprop="recipeInstructions">
<li> Combine the rice and water in the Pot. Close and lock the lid and set the pressure
release valve to Sealing. Cook for 3 minutes at High pressure. </li>
<li> While the rice is cooking, combine the coconut milk, sugar, salt and spices in a blender.
Blend on low speed until mixed, then add the eggs one at a time, blending each one
briefly just until fully incorporated. Set aside.</li>
<li> When the cooking time ends, let the pressure release naturally for 10 minutes, then
move the pressure release valve to vent any remaining steam. Press Cancel.
Open the Pot and use a spatula to break up the cooked rice. </li>
<li> Press Sauté. Pour
the coconut milk-spice mixture from the blender into the Pot in a thin stream.
Whisk the pudding for 4-5 minutes, just until it begins to bubble and the
temperature reaches 175F. </li>
<li> The pudding will still be quite liquid at this point, but it will set as it cools. Transfer to serving dish or separate into individual portions for meal prep.</li>
<li> Cover and chill for 3 hours before serving (unless you like to eat it warm!).</li>

You can use 2 cups of any kind of raw nuts or, for a shortcut, pick up a can of mixed nuts. In a large bowl stir the sugar, herbs, and spices into the olive oil until combined. Add pecans and stir until thoroughly coated.<br /><br /></div><div>To cook in an air fryer, spread nuts in air fryer basket and cook for about 5-6 minutes, shaking the basket halfway through.<br /><br /></div><div>To cook in an oven, spread on a rimmed baking sheet (lined with parchment for easy clean up) and bake for 10-15 minutes, until they are lightly toasted & smell nutty.<br />Cool and store in a sealed container at room temperature for 2 weeks. I was sick of eating fruit fundraiser oranges just out of hand, and my friend Debbie told me about her sister Chrissy's recipe from a magazine (Cooking Light maybe?). The combination sounded so weird that I had to try it. Debbie brought it over and we enjoyed it while watching <i><b>Love, Actually</b></i>. So in my mind, the holiday season, the fruit fundraiser season, and this recipe all roll together.<br>

I normally make this recipe with a salmon fillet, but in the interests of trying to be more frugal, I decided to try it with canned salmon. I've never used canned salmon before. If you eat blindfolded, the dish is about the same (slight textural difference). But I eat with my eyes first, so to me the dish is better with a salmon fillet.<br>

The garlic has woken up from it's deep winter slumber though it's nowhere near harvesting. The chives and raspberry canes are just beginning to stir. Some red leaf lettuce and celery from the compost miraculously survived the winter and is peeping up from a raised bed--though I suspect bunnies might nibble it off.<br>

I first shared this recipe nearly 5 years ago. I make it multiple times a week, year round, because I can guzzle iced chai during a polar vortex as well as during a heat wave. I thought I was being pretty frugal by making my own drink--then I took it to another level.<br>

Last summer, after reading about making tea in an Instant Pot in one of my pressure cooker cookbooks from the library, I decided to experiment.<br>
<br>
Instead of throwing the teabags from my half gallon of sun chai directly into the compost bucket or worm bin, I put them in my Instant Pot then added a gallon of water and made an additional batch of Chai concentrate.<br>
<br>
It was delicious! Out of used tea bags I got twice the volume of chai tea concentrate with a smooth, rich flavor and intense color. That experiment worked so well that it became the most frequent recipe I make in my Instant Pot--and the simplest!<br>

This recipe came about because my son moved into a campus apartment with his Instant Pot, because I'd stocked his freezer with a Costco box of Jimmy Dean Breakfast Bowls, and because one of his roommates does meal prepping.<br>

He developed the basic idea on his own during the fall semester. I thought of ways to streamline the process. Over winter break we put our ideas together and came up with this recipe. This recipe is a copycat version of Jimmy Dean Breakfast Bowls and Jimmy Dean Meat Lover's Breakfast Bowls.<br>

This Greek wild rice salad starts with pressure-cooked tender wild rice marinated in Greek salad dressing tossed with spinach, feta, and a rotating cast of preserved and fresh vegetables.<br>

While developing this recipe I made this salad three or four times in slightly different ways, and each time my spouse said, "wow, this is a great salad". Before I decided to put it on the website I figured I should ask a wider audience, so I made it for one of my Instant Pot cooking classes.<br>

It was a hit--from the students to the building monitor and custodian who helped me 'deal' with the leftovers! Next I served it to my extended family members, twice, and I think it's about as good as it's going to get.<br>

This recipe came about because of two things: my conflicting desires to have a lot of side dishes <i><b>and</b></i> a small batch Thanksgiving, coupled with my neighbor hosting her extended family for the holiday and having less control over the food on her table. Her son has a severe dairy and nut allergy, and even well-meaning relatives don't always think it through.<br>

It's got enough heat to make it interesting, and it's a meatless pizza that appeals to vegetarians and omnivores alike. You don't need a lot of preparation--a quick trip to the grocery store should set you up just fine--and making pizza at home is often faster than take out.<br>

Good planning is one of my keys to success in the kitchen--which sounds lofty but simply means that I've got a roll of parchment paper next to the foil and wax paper in the drawer, a pizza stone that lives in my oven and another that lives on my grill, and I'm likely to save that last cup of taco meat or that bit of leftover cooked potatoes because I'm thinking "I could put this on a pizza".

At any given moment you could open the door to the fridge or freezer and find a wide variety of vegetables and meats that would make a decent pizza. It's in my daily plan on Friday mornings to make a batch of pizza dough--something I do while the dogs are eating their breakfast.<br>

I like to combine produce that ripens at the same time. Tomatoes and basil, for one example. Corn and zucchini, for another. Apples and figs are an area I'm slowly exploring. Last year I shared my <a href="https://www.farmfreshfeasts.com/2018/10/fresh-fig-and-apple-dessert.html" target="_blank">Fresh Fig and Apple Salad</a>. Today I've updated an old post with new video, an easier to read recipe card, and the same terrific recipe.<br>

This recipe is based off of Marisa McClellan's Apple Pear Chutney recipe in her book Food in Jars, shown below. I changed it up a bit since I had fresh figs on offer. How did I get the fresh figs, you ask? Read on for my earlier thoughts on foraging fruit!<br>

Necessity is the mother of inventive recipes I am sure. Why else would anyone combine zucchini and peaches? Sure, food that is ripe at the same time generally pairs well together (tomatoes + basil, cucumbers + dill are two good examples) but it seems a little crazy to combine peaches and zucchini in a muffin. <br>

Call me crazy. I've been a canning fool (you can see <a href="https://www.facebook.com/FarmFreshFeasts" target="_blank">on my FB page</a>) and when I realized I had a jar of peach jam left in the pantry from a previous . . . ahem . . . home . . . I decided to use it in a muffin. [<i>What happens to jam after a 23 months in a cool dark place? Well, not much. The top of the jam was a bit darker than the rest, but the jar remained sealed and it tasted delicious. I just wanted room for all the peach raspberry jam I canned this year. Out with the old. This muffin uses whole grains--whole wheat flour and cornmeal. The first and third batches were made using white whole wheat flour and are a bit lighter in texture than the second batch, but using your standard whole wheat flour works fine as well. <br>

One of my favorite items in the Community Supported Agriculture (CSA) farm share or at the farmer's market is a bag of spinach. There are so many possibilities! If I'm overwhelmed with greens, unwashed spinach can hang out in the crisper longer than lettuce or even be frozen--to use in smoothies later on.
