How to Make Chai Tea Concentrate for Homemade Iced Chai

Make your own DIY Chai concentrate and treat yourself to a fancy iced sipper while giving your wallet--and your stovetop--a break! This recipe uses the sun and then the Instant Pot to create 6 quarts of chai concentrate from only 16 tea bags.

I first shared this recipe nearly 5 years ago. I make it multiple times a week, year round, because I can guzzle iced chai during a polar vortex as well as during a heat wave. I thought I was being pretty frugal by making my own drink--then I took it to another level.

Last summer, after reading about making tea in an Instant Pot in one of my pressure cooker cookbooks from the library, I decided to experiment.

Instead of throwing the teabags from my half gallon of sun chai directly into the compost bucket or worm bin, I put them in my Instant Pot then added a gallon of water and made an additional batch of Chai concentrate.

It was delicious! Out of used tea bags I got twice the volume of chai tea concentrate with a smooth, rich flavor and intense color. That experiment worked so well that it became the most frequent recipe I make in my Instant Pot--and the simplest!

If you are already a green smoothie person skip this paragraph. If you're not, why not? I used to drink green smoothies (spinach or kale combined with fruits in an attempt to make the greens palatable) and feel virtuous, not satiated, so I understand the lukewarm feeling towards the green smoothie. But I would like you to try this one, if you've got spinach and banana lying around and feel so inclined.

My spouse is an active guy. No "lie in the sand" vacations for him. He needs to be going places to do, see, and learn new things. A visit to Marietta, Ohio would be right up his alley. We'd stay in the historic Lafayette Hotel right along the water downtown, so we could wake up and walk along the river checking out the birds. I saw geese, ducks, sandpipers and a great blue heron during my recent Agritourism Adventure in Marietta, Ohio. After a stroll across the pedestrian bridge, we'd eat a locally sourced breakfast at the Busy Bee Restaurant (he'd love the massive blueberry pancake). On the weekends, we like to hit our local farmer's market, so we'd be sure to check out the River City Farmer's Market and bring home some Broaster's Coffee for our son.

Raspberry Kale Lemonade Slushie

My happiness upon seeing kale in the Community Supported Agriculture (CSA) farm share box is not feigned. I like kale--curly kale, lacinato kale, Red Russian kale . . . it doesn't seem to matter which variety. I like them all. This transformation from dreading kale to anticipating kale came in part because of my Vitamix.
Let's clear one thing up right now--I bought my Vitamix around 2001-02 and started this website a decade later, so there is no relationship to disclose when I mention the brand name of the machine. I'm just sharing what gives me excellent results every time. Just not with pizza dough--too difficult to get all of the dough out of the machine.

Using my Vitamix to turn kale into a beverage revolutionized the way I see kale. Because kale is a cool season crop, it arrives in the farm share box along with many other greens. I'm more interested in cooking the cabbage, the chard, my beloved beet greens, or spinach. I'd rather make a salad with the lettuces that are invariably included in the same box as kale. This leaves kale the odd green out, but this refreshing recipe turns kale into a summer sipper the whole family enjoys.

I had an idea to try a winter holiday version of my Cheater Margarita Smoothie using some of the Band Fruit Fundraiser grapefruit. It stands to reason that grapefruit and lime, both being tart citrus fruits, ought to play nicely together. On a whim I picked up a bottle of pomegranate juice and decided to add a splash of that for color (and additional tartness). I really liked the result.

Then my friend gave me a margarita glass for my birthday (because my friends rock) and I decided I'd throw the recipe up on the blog while grapefruit and pomegranates are still in season and did some day drinking to have good light for the photos. Oh, the things I do to provide free recipes using seasonal ingredients! Unfortunately for my photos, but fortunately for me, a friend called to tell me the good news of her impending move back here and I pretty much lost the light. I'm sharing the recipe anyway, and if I feel like taking more photos I will.

In the past I have put up a Year In Review post (please enjoy last year's post and the 2013 post) and then taken time off over the holidays.  This year will be a little different--I enjoy sharing muffin recipes and participating in Muffin Monday, which happens the last Monday of the month, so I will be back to share a muffin recipe on December 28th. I'm not sure if it will be Oatmeal Raisin Cookie Butter Muffins or something citrus-y that has yet to be made. When I have the mental energy I'll assemble a year in Review post.  But for now, because I'm still recovering from (and sharing around social media) #ChristmasWeek -- have you entered the $800 Amazon gift card giveaway? To be honest I really wasn't feeling a post for today. I'm still a bit worn out from doubling my workload and sharing 6 recipes in a row for #ChristmasWeek. [As an aside, the Amazon Gift Card Giveaway is happening for another week or so, have you entered? I'd sure like to have a connection to the winner. Go to this post for all the details.] However, seeing that it is citrus season (we got our Band Fundraiser Citrus a week ago) and as this recipe kept me going all through last week's craziness, I'm going to share it as is--I ran out of light last night so I'll update the photos as soon as I've made today's smoothie. I promised myself I'd take time off closer to Christmas, so you'll get one more week of recipes before my break.

I mean, everyone knows what to do with potatoes, onions, carrots and lettuce. A small farm can't make it on just a few crops--diversification is where it's at these days. Not a clue what, if anything, I am earning as I haven't made time to go check out my dashboard, but the experience has been very positive for me so far. Let me know how it is for you. Back to farms.] Farmers need to grow crops that will be ripening throughout the season so that us hungry folks have something to eat. And often, that means new-to-us foods.

I'm going to come across as a total booze hound in this post and I apologize in advance. I know that turning to alcohol will not solve any of life's petty little annoyances nor cure any chronic behavior issues. I know that alcohol is not a long term coping solution for any of life's stressors. If you are concerned about giving a gift with alcohol, please feel free to substitute any of the flavored syrups posted below as your spike of choice. Those flavored syrups are going in our Christmas stockings (and hopefully my kids aren't reading this).

With that caveat out of the way . . . it can be pretty damn hard to solo parent teens, or really kids in general, and the extra activities of the holidays make it doubly hard. Please consider giving the gift of a jar of Spiked Hot Cocoa Mix to anyone you know who would enjoy it--even yourself. What a wonderful way to unwind after a busy holiday than with a cup of hot cocoa--spiked with a little something for mom & dad, [mom & mom, dad & dad, solo parent] left plain for the kids. You'll notice a couple of subtle changes from the standard hot cocoa gift mix recipe. First off, there is no powdered milk in this recipe. That means you need to get to mix it with the milk of your choice. An extra step to be sure, but I have my reasons. I grew up drinking the occasional milk-stretched-with-powdered-milk and personally can't stand the taste of reconstituted milk. I'll bake with it no problem, but I will not drink it by choice. I'd rather literally walk a mile down the street to pick up a gallon of organic milk for me and my kids. [It's good exercise for the dogs, too.] If you have a dairy allergy or are avoiding cow's milk, this mix is for you as it is dairy free. Please feel free to mix up your hot cocoa with the rice, soy, or nut milk of your choice.

Slow Cooker Apple Chai for a Crowd (or Yourself)

In an online food blogger group we've been discussing recipe testing. From cookbook author/bloggers to 'here's what I ate today' bloggers, everyone has an opinion and we're not afraid to share it! It's been an interesting discussion.

With a recipe posting schedule of Monday, Wednesday and Friday (12 to 13 posts/month) I've got flexibility in what I choose to post. Let's take the past 24 hours as an example. I hosted a book group in my house yesterday and served Asian Pear Cardamom Cream Muffins, Asian Pear & Pear Butter Soaked Oat Muffins, Sweet Potato, Turkey Sausage & Gouda Breakfast Casserole, Sweet Potato, Hatch Chile, Cornbread & Queso Breakfast Casserole, sliced apples with Apple Cream Cheese Toffee Dip, and Slow Cooker Apple Chai.  Are the recipes on the blog yet? Um, no! I just got the dishes done! The rest will appear when it's seasonal [Hatch chiles in August, and when do Asian pears appear in the stores?].
That's 6 recipes, or 2 weeks worth of blog posts [and about 6-7 hours of food preparation, 81 photos that need to be edited, 3 sinks full of dishes to be hand washed, an additional dishwasher load, 2 extra trips to the grocery store, and plenty of writing and typing as that's part of my process. Though if we're talking hours, I started thinking about what vegetables from our Community Supported Agriculture (CSA) farm share I'd have to use up--and what would go over best with my guests--about a week ago and mentally walked though the muffins and casseroles a few times before picking up a knife. I've been hacking at just this post all afternoon/evening, too, in between band fruit fundraiser captain meetings and AFO fittings, and in lieu of reading a book or watching TV. We all make choices on how to spend our 24 hours, and this is how I choose to spend mine].

The recipes that I share on this blog are what my family [and my book group, and my coworkers, and the high school marching band] eats each week. If it works and I have good notes on ingredient amounts and cook time, I won't make it again. [I mean, while we enjoyed Beef Tongue Nachos and Caramel Toffee Apple Parfaits I'm not going to serve them 4 times just to make sure the first 3 weren't flukes.] If a recipe doesn't work--it doesn't appear on this blog. Period. Failure photos do make it to my FB page, however. We're all human--except the spambots. Sometimes I'll need to tweak things a bit, like I did with the Double Chocolate Raspberry Muffins. Sometimes the recipe testing can go too far and I just need to stop the madness and put it on the blog already.

Recipe testing for this post has been so. much. fun!  It's my first beverage post, and I started off with a bang, seeing as this is also an alcoholic beverage as well as two recipes in one post.  I'm not going to start any cocktail post trends--Friday pizza and Monday muffins are enough for me--though I do have a lovely winter chai apple blend to share when the weather warrants it, and perhaps a summer ice tea concoction . . . but first--the Cheater Margarita Smoothie. It's too easy and too tasty not to share, and if you've got any lingering fruit in your freezer this will make quick work of it, enabling me you to empty and defrost the freezer before the new Community Supported Agriculture (CSA) farm share season begins.

I was wondering why it is that I just don't mix cocktails at home, and I've come to the conclusion that it's because I have spent a good portion of my adulthood in states that don't sell hard liquor everywhere.  In Virginia, for example, you need to go to ABC stores (run by the state Department of Alcohol Beverage Control) in order to purchase anything stronger than beer or wine.  [In Hawaii the ABC store is where you get sunscreen and a can of macadamia nuts before heading to the beach.]  Ditto living on a military base, but it's called a Class Six store.  [I have no idea what classes one through five are.]


Since I'm not used to having bottles of spirits around and mixing and measuring, I gravitate to the premixed bottle of margarita stuff.  I can't enter into a debate about the merits of this or that tequila because I just don't know enough about them.  I just know I like the frozen slushy fruit margaritas at restaurants.

During the winter I spent some time in Florida watching my son march with his high school marching band in Disney and sharing HashtagOrangeWeek here.  Our last night there, my daughter and I were too pooped to venture past the TGIFridays in the hotel lobby for our dinner.  Conveniently, it was Ladies Night, and when I ordered the strawberry margarita the server brought two!  Score! Finally I slept well in a hotel room!

The recipe I'm sharing is terrific for a family Cinco de Mayo celebration.  Start by making a pitcher of limeade-based fruit smoothies for the kids, then make a pitcher of margarita-based fruit smoothies for the grown ups.  Everyone gets a fruity drink which makes them happy.


I've made this with blueberries, with blueberries and raspberries, with strawberries, with bananas, blueberries and raspberries, and with peaches.  [Told you recipe testing was fun.] So far my favorite is the mixed fruit with banana--the addition of banana adds a nice creaminess to the base much like it, or yogurt, can do for a standard smoothie.
