Make Ahead Irish Mashed Potato Casserole

Mashed potatoes made decadent with cream cheese, roasted garlic, and sour cream. Make them ahead of time and reheat in the oven or the slow cooker. Great for holiday potlucks, kids having dental work, or just because this is such a great recipe. Thanks, MA!

In my humble opinion, the best American meal--bar none--is Thanksgiving.  One year I made a full-on traditional American Thanksgiving meal three times in 4 months.  The first time was, no surprise, the 3rd Thursday in November.  The second time was on Christmas day, and if I had my Danish sister-in-law as my sous chef, I would do that whole deal again in a heartbeat (she made it so easy for me!).


The third occasion was after my spouse returned from a deployment, when I was stuffing him full of all his favorite dishes night after night. I even shared some of those leftovers with folks who found themselves unexpectedly in a hospital far away from home. Thanksgiving knows no boundaries.


Making a Thanksgiving meal from locally sourced farmer's market or Community Supported Agriculture farm share ingredients?  I got this.

Slow Cooker Curry with Buttercup Squash, Chicken, and Green Tomatoes

Buttercup squash are kind of homely looking, aren't they? Compared to the smooth unblemished skin of a butternut, they end up looking like the barnacle-covered whales of the winter squash family. No matter what a buttercup squash looks like on the outside, on the inside it's a thing of beauty.


A buttercup squash has rich orange flesh that can be peeled and cubed or roasted whole and pureed. Use it like you would most of the winter squash family (exception:  spaghetti squash). This recipe combines a buttercup squash with green tomatoes and chicken in a slow cooker curry.

Green Tomato Garlic Chili in the Instant Pot® or Slow Cooker

Green tomatoes, roasted garlic, and ground beef make a colorful and flavorful chili recipe perfect for fall. You can make this in the Instant Pot®, a slow cooker, or on the stovetop.

As someone who cooks with what's in season, this time of year means green tomatoes. I decided to update an old post from my first year, really the first few weeks of starting this website. In addition to publishing new photos and adding an easier to read recipe card, I've also cooked this recipe in my newest appliance, the Instant Pot®. My husband bought me an early birthday/Christmas present, and I unboxed it--with the dogs' help--and shared the resulting video on my FB page. I'm quite happy to ditch the old, poor quality photos for some newer, still poor quality photos (it's been raining here), but I didn't want to delete how I was inspired to make this chili. For that, please feel free to read my original text below.
I recently started volunteering at a thrift shop.  I didn't realize that it would mean I'd be shopping at the thrift shop on a regular basis, which is an unfortunate happy side effect.  I mean, I did get a pair of new-to-me jeans for $3.  And they're not 'mom jeans' either. Last time I volunteered was after I'd made the Cabin Casserole.  I was chatting with Fran about it, and how the recipe called for green tomatoes, when she told me about her Green Tomato Garlic Chili.  I immediately requested the recipe! This recipe is from The Garlic Lover's Cookbook. I've adapted Fran's recipe by cutting the fat, adjusting the spices, swapping roasted for fresh garlic, pumping up the amount of veggies, and finely chopping everything so my kids will eat it. We liked it so much that I harvested the rest of the green tomatoes on my plants, cored them (the composting pigs like green tomatoes too!) pulsed them in my lovely food processor, and froze 2 2+ lb bags of green tomatoes for winter chili nights.  Make that chilly winter nights.  Oooh!




A few Notes about this recipe.
  1. I used ground beef, but feel free to substitute fresh ground pork. I already know ground pork and green tomatoes make a great chili--check out my Chorizo & Green Tomato Chili recipe here.
  2. Use the hot peppers of your choice. I'm able to get quarts of freshly roasted Hatch chiles each August from the local grocery store, and I pop them into the freezer to use throughout the year. I think using roasted chiles adds more flavor than fresh chiles, so I do recommend using roasted green chiles.
  3. No roasted garlic? No problem! You can substitute minced garlic, probably ⅓ of a cup. Like with the chiles, I think that using roasted garlic punches up the flavor in many dishes. When I harvest my garlic crop each summer, I roast and freeze a portion for use throughout the year. Here's a post about how I put up my garlic crop.
  4. That's a lot of chopping! Yes--I like to start my day at work chopping a bunch of onions, but if chopping isn't your thing, run the onions, bell peppers, and green tomatoes in turns through a food processor until they are finely chopped. [If you don't have a food processor and chopping's not your thing . . . add that to your birthday wish list and find room in the kitchen.]
  5. I've included instructions for cooking this chili in an Instant Pot® (mine is 6 quarts, plenty of room), in a slow cooker, and on the stove top. I am sure you could figure out a way to cook this on a grill--but I'm not going to do that. I grill pizza and vegetables mostly, and I'm good with that.

How to Make Kalua Pig in a Slow Cooker

Earlier this year I read a book called The Year of Yes [Amazon link below with some other stuff. You click, you find something else to buy, and I may get a couple of pennies for my annual website costs. Up to you. Thanks.] In the book, Shonda Rhimes wrote about choosing to say Yes to projects outside her comfort zone, and I decided to do the same thing. When my local community center asked me to teach another canning class I said yes and developed a pickling class I'll be teaching next month. When Jennifer of the Ohio Pork Council asked me to do a cooking demo at the Ohio state fair? Of course I said yes.

The schedule looked busy. The dates of Fair Week included the time I'd be up in Minnesota having a family reunion celebrating my folks' 60th anniversary and visiting my spouse at his new assignment, meaning I'd come off driving 2200+ miles and jump right into cooking? It seemed reasonable 3 months ago, and in fact it was just fine. I was crazed and harried, but just fine. Jennifer asked me to cook something easy, and after about 30 seconds of thought I knew I'd be grabbing a lei and channeling my time in Hawaii. I could cook this with my eyes closed, although there are knives involved so I don't recommend you try it.





I lived in Hawaii, on Oahu, twice--both times courtesy of the military. During my first stay, my son was born in a Pepto bismol pink hospital on the side of a mountain while I was assigned to the patient squadron and waddled around exploring as much of the island as I cared in my heavily pregnant/postpartum state. [You might think that's not much, but you don't know my spouse. He had us hiking up to see waterfalls the day after our baby was released from the NICU--2 weeks after my C section.] My spouse was the one stationed in Hawaii the next time we lived on Oahu. He likes to refer to the assignment as my 3½ year "Hawaiian Honeymoon". [We had a JoP wedding in the States and I'd flown back to Germany 2 days later, so no honeymoon. The marriage was the important part, not the vacation.] When we arrived in Hawaii, our kids were 2½ years old (returning to his birthplace) and 8 months (our baby girl). They were 6 and 4 when we left. Yes, I changed a lot of  diapers. I don't think you're supposed to wash diapers on a honeymoon, nor have your spouse go on a deployment, so I'm still waiting for my trip.

Six Ingredient Spicy Mustard Greens Soup (in the Slow Cooker)

When the community supported agriculture (CSA) farm share give you a gallon-sized bag of mustard greens, you've got to get right on them. If you don't, you'll turn around one day to find 3 gallons of mustard greens jockeying for space with the cabbages, lettuces, spinach, and . . . . the next thing you know, you have Greens Paralysis. It's a common phenomenon.

When I was suffering from Greens Paralysis, as I posted on my FB page, it was primarily due to an excess of mustard greens and too few family dinners. At a recent Local Food Summit in my town I had the pleasure of listening to my farmer, George Mertz, talk about the benefits of joining a CSA. One that I wasn't expecting to hear, but absolutely agree with, is that joining a CSA will increase the number of times you'll sit down to a home-cooked meal. This easy home-cooked meal broke my Greens Paralysis. With just six ingredients it assembles quickly in the slow cooker.

Now, when I say 'only six ingredients' I'm not talking about ingredients like a cake mix and a can of pie filling. It's true, two of my six ingredients are chock full of other ingredients. Those would be the chorizo and V8 juice. [Actually, so is my chicken stock, now that I think on it. But I can pronounce all of these ingredients.] The sum of the parts of this soup, thanks to those multi-faceted ingredients, is superb. Like nearly all soups, it is better as a leftover on the second day. And anything that breaks my Greens Paralysis, that enables me to get my groove back with respect to my farm share, is very appreciated.

Slow Cooker Apple Chai for a Crowd (or Yourself)

In an online food blogger group we've been discussing recipe testing. From cookbook author/bloggers to 'here's what I ate today' bloggers, everyone has an opinion and we're not afraid to share it! It's been an interesting discussion.

With a recipe posting schedule of Monday, Wednesday and Friday (12 to 13 posts/month) I've got flexibility in what I choose to post. Let's take the past 24 hours as an example. I hosted a book group in my house yesterday and served Asian Pear Cardamom Cream Muffins, Asian Pear & Pear Butter Soaked Oat Muffins, Sweet Potato, Turkey Sausage & Gouda Breakfast Casserole, Sweet Potato, Hatch Chile, Cornbread & Queso Breakfast Casserole, sliced apples with Apple Cream Cheese Toffee Dip, and Slow Cooker Apple Chai.  Are the recipes on the blog yet? Um, no! I just got the dishes done! The rest will appear when it's seasonal [Hatch chiles in August, and when do Asian pears appear in the stores?].
That's 6 recipes, or 2 weeks worth of blog posts [and about 6-7 hours of food preparation, 81 photos that need to be edited, 3 sinks full of dishes to be hand washed, an additional dishwasher load, 2 extra trips to the grocery store, and plenty of writing and typing as that's part of my process. Though if we're talking hours, I started thinking about what vegetables from our Community Supported Agriculture (CSA) farm share I'd have to use up--and what would go over best with my guests--about a week ago and mentally walked though the muffins and casseroles a few times before picking up a knife. I've been hacking at just this post all afternoon/evening, too, in between band fruit fundraiser captain meetings and AFO fittings, and in lieu of reading a book or watching TV. We all make choices on how to spend our 24 hours, and this is how I choose to spend mine].

The recipes that I share on this blog are what my family [and my book group, and my coworkers, and the high school marching band] eats each week. If it works and I have good notes on ingredient amounts and cook time, I won't make it again. [I mean, while we enjoyed Beef Tongue Nachos and Caramel Toffee Apple Parfaits I'm not going to serve them 4 times just to make sure the first 3 weren't flukes.] If a recipe doesn't work--it doesn't appear on this blog. Period. Failure photos do make it to my FB page, however. We're all human--except the spambots. Sometimes I'll need to tweak things a bit, like I did with the Double Chocolate Raspberry Muffins. Sometimes the recipe testing can go too far and I just need to stop the madness and put it on the blog already.

When my friend Mary brought her Sweet Potato and Black Bean chili to the thrift shop for lunch, I spooned up that bowl of spicy comfort and was smitten.  Mary's chili, adapted from The Clueless Vegetarian (Amazon affiliate link) was spicy yet went down smoothly, and like all great chilies each person can customize their bowl with a variety of toppings.
I don't know about you, but I tend to become smitten with foods and cook them over and over.  Being a seasonal eater works well with this tendency, because I'm always moving onto what's up next, seasonally, and don't really have time to get into food ruts. At least it works well when fresh vegetables are appearing each week in our Community Supported Agriculture (CSA) farm share box!  During the winter months I tend to rely on the produce that can store longer, like the sweet potatoes and butternut squash in the Strategic Winter Squash Reserve, as well as vegetables I've canned or frozen.
I was so smitten with this chili that I made it several times. Each time I loved it even more.  My kids gobbled it up.  Shoot, it was even the first leftover my spouse scrounged out of the fridge when he returned from his most recent deployment.  The combination of colorful beans and sweet potatoes from this chili inspired my Harvest Sweet Potato Salsa.

Serving chili is a great meal for a variety of eaters--you can top it with a whole host of extras if you like.  Some of our favorite toppings:
  • red and green salsas
  • pickled peppers
  • black olives
  • shredded cheese
  • sour cream
  • tortilla chips
My friend Rebbie hosted a chili party which included an oven full of baked potatoes.  My kids created their own loaded baked potatoes from Rebbie's topping selections and missed out on her award-winning chili, but we all went home full and happy.

Want to add more vegetables to your daily life? Do you think celery is underutilized in your kitchen? If so, read on for an easy soup--including a slow cooker option if you'd like to use that. This can be a vegetarian or omnivore soup--I've made it with vegetable stock as well as chicken stock--and appeals to my kids in a way that ants on a log never did. [Um, that's our term for a celery stick spread with peanut butter and dotted with raisins, just in case you were thinking I'm feeding my kids ants deliberately. Accidental ants I'm not responsible for.]

I'm not a huge fan of celery, so when my regrown celery resulted in an overabundance in the garden plot [shown below with one of my garden assistants, Simon] I scrambled around looking for ways to enjoy it.  Sure, I'm happy to stretch meat by adding chopped celery (and onions, carrots, peppers, or shredded squash) into my recipes for tacos, burgers, or meatloaf.  But I wanted to try some other ideas.  After all, celery from the Community Supported Agriculture (CSA) farm share--or in this case from my garden--actually has a delicious CELERY flavor that I've never really tasted with store bought celery.  Who knew? While scanning the cookbook shelves at the library I saw a recipe for celery rice soup.  I didn't have any of the ingredients, other than celery and rice, so I didn't take note of the cookbook name, I re-shelved and moved on, but the recipe idea stuck with me.

Later in the week we were feeling run down, and celery rice soup seemed like a comforting idea.  It was good enough that I made it again a week later.  I've tried this with both yellow onions and leeks.  I bet it would also be good with shallots, so any alliums you've got on hand--use them.  We preferred this with chicken stock and chopped cooked chicken, but I could see taking it in a different direction--soy chorizo for vegetarians?  It's fairly . . . I won't say bland, but I will say it's not crazy seasoned like Ma Po Tofu [I got a jar of Ma Po Tofu sauce in my Christmas stocking and I'm looking forward to trying it--with celery].  This soup is just nice, basic, easy, and no frills--good for warming your belly on a cold day. And good for using up an abundance of celery.  Speaking of abundance . . . here's what I was dealing with when I made it:

My spouse is a vegetarian, at least while he's away on his all-expense paid work trip to an exotic foreign locale.  If you think it's ironic, considering I just shared a post on 106 Recipe Ideas Using Ground Beef because I have 110 pounds of ground beef in the freezer, you're in good company.

Since the rest of the household is omnivorous, I've been experimenting with ways to create meals we can all enjoy.
I've heard homeschoolers will use the Bus Stop Method of teaching--introducing a subject, then dropping off students to work at different levels while continuing to teach that subject.  I consider recipes like this, and my Vegan/Vegetarian/Omnivorous Valentine's Pizza and my Acorn Squash, Beet, and Sweet Potato Chili, to be similar to the Bus Stop Teaching.  Call it Bus Stop Cooking (though bear in mind I am cooking in my kitchen, not at a bus stop, and I have access to running water, an oven, stove, and all that).
 The base of this recipe is a vegetable stock, slowly cooked in the slow cooker (is that redundant?) all day (and in fact I kicked this batch over to Keep Warm and let it go overnight since I didn't feel like dealing with it in the evening).  I like mushrooms in my vegetable stock, so when I realize that I'm not going to finish a package I'll toss them in with the rest of the cast of vegetables into a Vegetarian Soup Pack in the freezer.

The inspiration for this soup came from Alanna's Greens 'n All Beet Soup.  I love the flavor of that soup, but my kids aren't crazy about chunks of vegetables, and lately with my obsession with sautéed beet greens there just wasn't any left for soup.  So I figured I'd adapt Alanna's recipe with the veggies I had.  Once I simmered and pureed the soup, I had a rick, thick, vegan bowl of yumminess (shown above).  That's Bus Stop #1.  Adding a dollop (love that word) of sour cream makes a nice vegetarian bowl (shown below left).  Bus Stop #2.  Adding a pound of browned and drained ground beef to the pot means that we've arrived at the final destination--a soup for omnivores [aka another way to get my kids to eat beets.  With beef.]

I don't know if my spouse will continue as a vegetarian when he returns.  He says he'll eat "happy meat", so I've sourced a "locally-raised on locally-grown and -ground GMO free feed" turkey for Thanksgiving.  I do know that I will continue this Bus Stop Cooking method, because it tastes good!

I like to make chili using not-the-usual vegetable suspects.  It all started with this Green Tomato Garlic chili recipe a year ago.  I liked it so much I put up a couple of quarts of chopped green tomatoes in the freezer for winter chili.  Instead of making more green tomato chili, however, I veered off in a squash and beet direction with Acorn Squash, Beet, and Sweet Potato chili.  Then I used a quart of the green tomatoes for Green Tomato Bacon Jam.

This chili has cubes of pork, Great Northern beans, and my put up salsa verde.  I wanted a thick chili, so I added some grits and wow--that did it for me.  We liked this chili with a swirl of sour cream stirred into each bowl.  I bet my corn cheddar bacon muffins would be great with it.  If you're having a chili cook off, this would be a little something different.  It's easy to fix (the slow cooker does most of the work) and the flavor is wonderful.  This is also great for a work day meal--brown the pork the night before while the kitchen is still active with dinner, chill it overnight, and dump all the ingredients into the slow cooker the next morning.

Note to self--this fall, put up more quarts of chopped green tomatoes!  In fact, I think I'll put the word out with my neighbors that if they don't want their tomatoes still on the vine when the first frost is predicted, I'll be happy to come harvest.  The cool thing about green tomatoes is that they can hang out on your counter for a few days until you can process them.  What's the worst that can happen--they start to ripen?  Oh, the horrors.

Slow Cooker Squash and Beef Masala

With school starting I feel like I'm supposed to say our days will get busier, but more than the busier Fall days, I am looking forward to the structure of the coming weeks.  Without any structure to each week (my activities have been irregular this summer), meals and meal times have really been fluid.  We'll eat lunch at 2 pm, then not really be hungry for dinner.  Having the kids up at ___ time, out the door at ___ time, with evening activities at ___ time will give me a framework on which to hang meals.  Then my spouse will return, and we'll soon be in the swing our our family routine again.  I'm looking forward to that.

I use my slow cooker year round, but not often enough for it to get Pride of Place in the kitchen.  It lives in the basement Active Storage area.  Technically I have 3 slow cookers, so they live in this area.
[My spouse has an engineer brain, so we have an Active Storage area and a Cold Storage area--which doesn't store food, but does store less frequently accessed items like Christmas decorations.]  I primarily use my ancient 3-4 Quart Crock pot, but I love to heat spaghetti sauce in my little one (for the days when my son is in charge of boiling the noodles right before the rest of us get home) and make Kalua Pig or soup stock in my large one.

I developed this recipe from a desire to use some of the cow in the freezer and the patty pan squash from the CSA farm share in a form that my kids would enjoy over multiple meals.  They loved Rebecca of Foodie With Family's Slow Cooker Chicken Tikka Masala when I riffed off it to make my Slow Cooker Chicken and Chick Pea Tikka Masala.  I figured I'd do something similar.  Since tikka = chicken it makes no sense to title this dish "Tikka" anything as there's no chicken in it, but since masala = a sauce, usually with tomatoes and spices and cream, I'm good with my title.  This makes a lot, and the leftovers are good in a thermos for a school or work lunch.

Slow Cooker Greek Chicken Tacos

If you've been enjoying some early summer salads and are looking for a change of pace, try this dish.  It's a great as salad, and as an appetizer, and works year round as an easy supper.  Since this is a year round dish, it's been in the queue for a while waiting to be published.
Last week I was participating in a G+ Food Bloggers Community Education event with +Chef Dennis Littley  and +Larry Deane, and Larry said "give your readers what they want".  That struck home with me, so since I've gotten requests for this recipe, it's bumped some fresh-from-the-CSA recipes to come out today.  How did folks know to request this?  They saw the photo on my FB page, that's how.

I intended to title this post Greek Artichoke Lemon Olive Chicken in a Slow Cooker, in the interests of being as descriptive as possible.  Then I thought about how we actually ate the resulting chicken, asked folks on FB for suggestions, and decided that Slow Cooker Greek Chicken "Taco" Meat is really a more apt title.  This dish is cooked in my crock pot, and does contain the artichoke, lemon, and olives I originally mentioned, but we use it like we use taco meat:  stretched on tortillasover grains, or in a salad.  And the leftovers?  They make the best Greek Five Layer Dip I've ever had.  Possibly the only Greek Five Layer Dip I've ever had, too.  Try this in the summer when it's too hot to cook, or during football season for a delicious dinner/appetizer that's just familiar enough not to be weird and a delicious twist on a classic.

I may have alluded to my cold kitchen over the winter months.  Either the reference to the Strategic Winter Squash Reserve in the cold (down to 50 degrees Fahrenheit!) corner of my breakfast nook, or the photos of the frost on the inside of my kitchen window, seen in my Gardening Photos album on my FB page, would get the point across.
As cold as my kitchen is in the winter, it is correspondingly hot in the summer.  I do what I can, covering the East-facing windows with heat-blocking drapes in the morning and using the oven less.  I intend to get my grill on this summer, but there is another way to cook your food without heating the kitchen--a slow cooker.
This dish started with my desire to use my slow cooker to do the cooking while I was at work, and turned into a game to see how many complimentary layers of flavor I could add to the dish.  I was inspired by these other Greek Chicken Slow Cooker dishes, seen here and here, but since I had tortillas but no pitas, I went in a taco direction.  Then I read about Avocado Feta dip, and it was a great accompaniment to the chicken.

Leftover Remake: Ham and Bean Soup--No Salt Added + Slow Cooker option (Leftover Ham Week)

My spouse took this photo.  This flower that has sprouted in a seam between the tiles on the roof of the Believer's Palace in Baghdad, which was actually a decoy building to hide a bunker that was built underneath the palace.  On my FB page I've shared what it looked like just to the right of the photo.

To me, this quote exemplifies the best of military spouses.  Due to our spouses' careers, we often find ourselves re-creating our lives every few years as we move across the globe.  So many military spouses I know are enthusiastic, energetic people genuinely interested in exploring what makes this new location different than the last home.

It was with this spirit of adventure that I joined the local military spouse group for a tour of Dorothy Lane Market.  DLM is an amazing grocery store less than one mile (according to Map My Walk) from my home.  You may know of Wegman's--the Northeast US chain of grocery stores known for amazing customer service, happy employees, and terrific products.  DLM is a 3 store midwestern version.  During our tour of DLM, the thing that struck me was how similar to my kitchen the store is run.

I make no secret that I'm partial to marked down produce, day old bread, and discounted meat and dairy products.  I'd noticed that I never saw magical markdown stickers at DLM, and during the tour I learned why.  Primarily, most of the baked goods and dairy products are picked up by different shelters each day.  But the rest of the stuff?  Tom told us it gets made into soups for the hot foods area, into salads, and into prepared foods sold in the ready-to-eat section.  Have you ever looked at your fridge and thought, "well, I need to use up that half onion, that baked potato, that bit of chard, that ham . . ."?  Can you imagine having an entire produce section/meat department/dairy department at your disposal?  Wowza.

During our tour we went from the top of the store to the basement, checking out different departments along the way and enjoying samples--including amazing fresh mozzarella made by the very talented Tracey.  Wow, that on a pizza, with some cherry tomato pesto and CSA farm share spinach?  We checked out the kitchens--does anyone other than Hobart make commercial dishwashers?  I really appreciated the chance to peek behind the scenes of a place I shop at frequently--all because of a curious military spouse's initiative.  Thanks, Aileen!

When we moved in to our home, our neighbors welcomed us with a box of cookies and Killer Brownies® and I was just blown away.  Seriously amazing goodies.  I'd known that we could walk down to Graeter's ice cream before we moved in, but this DLM store was new to me.

I was delighted when my daughter went Christmas shopping at Dorothy Lane Market.  No, she did not give me a Killer Brownie.  Instead, she gave me a container of beans + a recipe for Heavenly Ham® Bean Soup.  Recently she helped me make the soup--and her interpretation of the seasonings turned it into a delicious soup without any additional salt (the ham is salty enough, we think).

I used to buy the bags of Ham Been soup that contained such a pretty array of beans plus a seasoning packet.  I'd follow the recipe, using my leftover ham bone, and make a delicious soup.  Then I read the contents of that seasoning packet and resolved to make my soup without it, and it never really turned out right.  Something was just off.

I'm so glad I had my daughter help me make this recipe I'm sharing with you today.

There are 2 cool things about this recipe.  First, the recipe includes the amounts and kinds of dry beans*, so if I wanted to make up quart jars of my own pretty bean mix for gift giving I could.  Second, I got to use a jar of crushed tomatoes that I put up in the fall (which, come to think of it, would make a good pair of jars to give:  a jar of crushed tomatoes plus a jar of dried beans plus the recipe to use both to make soup).
*If you want to make your own pretty bean mix, here's what the recipe suggests:  1/2 cup (dry) each of lentils, split peas, black-eyed peas, pinto beans, navy beans, black beans, red kidney beans and lima beans.  Four cups total of mixed beans.

Slow Cooker Chicken (And Chick Pea) Tikka Masala (Food Bloggers Change My Life #2)

Have you ever made a recipe for the first time, in someone else's kitchen, for a crowd?

Scary thought, no?  I'd bookmarked this recipe, Slow Cooker Chicken Tikka Masala by Rebecca of Foodie With Family because my family loves Indian food, I love my slow cooker, and her directions seemed clear, easy, and very do-able for me.  I just didn't know when I'd get around to making it.

The wonderful thing about joining a CSA is that you've got seasonal farm fresh vegetables flooding into your kitchen every week.  The annoying thing about being in a CSA is that you've got seasonal farm fresh vegetables flooding into your kitchen every week.

What if you feel like eating tomatoes, the canned ones you've put up, but you've got fresh spinach, Band Fruit Fundraiser citrus, and the Strategic Winter Squash Reserve staring at you reproachfully?

You regretfully turn away from your canned tomatoes, knowing that they will be waiting for you when you've dealt with all the fresh stuff.  And then you run away!

You run away to visit your in-laws.  You know that everyone likes to sit down together around the big table and enjoy a meal, and it's awfully nice not to always be the one to make the meal.  So you offer to make a meal one of the nights of your visit.  But what to make?  What will appeal to 4 generations of eaters?

I decided to go for it and make this meal. For the first time.  Not in my own kitchen.  Not just for my family.  Sure, I played it safe and brought with me almost all the ingredients (since I had everything but cilantro on hand already).  I brought my own slow cooker and my own rice cooker.  I even brought my own measuring spoons!

You know what happened?  Thanks to the clear directions, great photos, and excellent recipe it worked out just fine.  It went together easily, the whole crowd ate it, and some even went back for seconds.

Slow Cooker Salmon Swiss Chard Artichoke Dip

It's steamy--I could hardly wait to eat a bite!
I still remember the first time I had hot artichoke dip.  It was amazing.  It became a regular on my roster of hot party dips because the key ingredients either could hang out in my pantry or were fridge staples.  Then I moved to Hawaii and my friend Sara served my beloved dip--but with salmon.  It was eye-opening@  Sara had been inspired by a crab version, and a smoked salmon version, but made it her own with a salmon filet and liquid smoke.

I've kept liquid smoke in the pantry ever since.

I never empty the bottle, however.  I keep moving and giving away the open bottle first.  Then I get to discover where the liquid smoke is shelved in a new grocery store and carry on.

Thus was the status of my hot party dip roster (everyone has one of those, right?) until I read Farmgirl Fare's Hot Swiss Chard Artichoke Dip.  Her seamless blending of my most prolific garden green with my favorite dip inspired me to add it to my recipe.

If you have a massive salmon filet, use part of it in this dip and part with oranges on pasta.  I did.  When it's warmer, I have other plans for my salmon filets, so stay tuned.

I've made this with both marinated artichoke hearts and canned (non-marinated) artichoke hearts.  I think it works well both ways.  If I have canned choke hearts I add mayo, and if I have choke hearts in oil I use less mayo.

Crock Pot Chicken Adobo with Sauteed Farm Fresh Veggies

An easy overnight marinade and then a day in the slow cooker for this flavorful chicken. The farm share Daikon and Bok Choy side dish comes together quickly.

Update:  Somehow I deleted all the original text between the intro and the recipe.  Here's some new thoughts:

During my time on active duty I was fortunate to work with nurses from all over the world.  In addition to learning about different points of view and different cultural aspects of nursing care, I also got to eat the most amazing foods at work functions.  I've never been to the Philippines, but I first tasted Chicken Adobo thanks to a Filipina nurse.  
It's crazy easy to make in the slow cooker using pantry ingredients (start the night before) and results in a bunch of moist, tender, flavorful meat, along with juices suitable for flavoring CSA farm share veggies in a way that entices your kids to eat them.
