Avocado Feta Hummus Layered Vegetable Appetizer

Avocado feta hummus is a pretty and protein-rich vegetarian appetizer. Customize your platter with diced vegetable toppings and use pita chips or sliced vegetables as dippers.

Being an intentionally seasonal eater means I get to eat amazingly delicious foods.  Fresh food--tomatoes, strawberries, even celery--just tastes better and I'm usually willing to wait out the winter months for those fresh tastes.  But if I limited my diet to solely local foods, I'd miss out on bananas, avocados, olives, shrimp, chocolate, salmon, tea . . . lots of stuff!

I compromise, of a sort, and think Kristy's idea of eating 80% local/20% other, as described in her podcast, is a terrific idea.  Every beet we eat is locally grown.  All the kale, as well. Much of the tomatoes and tomato-based products we eat are from my backyard and our Community Supported Agriculture (CSA) farm share. I make enough pesto to last us for the year.  I'm also good with garlic, between roasting my own crop and using the fresh stuff from the farm share.

Avocados are an area where I enjoy breaking out of the local foods mode. After all, no avocado trees grow in my backyard (although I did have a banana tree when we lived in Hawaii)! Several years of resolving to add more avocados to my life [this is a New Year's Resolution more should adopt--it's fun!] means I am happy to report that I've gone beyond guacamole and avocado toast.

As soon as I tried the combination of salty feta and creamy avocado in Maria and Josh's Avocado Feta dip I was hooked. I keep coming back to that combination. I shared an Avocado Feta Lemon Yogurt Dip, and today I've made it into a hummus.

Avocado feta hummus is good as a stand alone dip--but it sings when you layer it with fresh & preserved vegetables and additional cheese then scoop it up with fresh veggies and pita chips.

I think this dip--with the green olives, yellow peppers, and red onion--looks like Easter egg colors.  I'm sharing it now just because I thought it would be a nice Easter appetizer, and I like to plan ahead.

A vegetable-filled vegetarian recipe to use up hard cooked eggs, this avocado & egg salad sandwich is extra creamy thanks to hummus, and with the colorful crunch watermelon radishes.

I'm a practical cook yet I tend to creativity in the kitchen. Planning meals is NOT a paper and pencil exercise, it's more me staring at the fridge and seeing what containers I can empty to create space. Turning bits of leftover meats into pizza toppings is one inspired way I keep our family's Friday Night Pizza Night interesting, as described in My Pizza Primer. Adding Community Supported Agriculture (CSA) produce to the family meals is a constant source of inspiration--actually the purpose of this website. Repurposing leftovers is yet another source of inspiration for me, and the reason for today's recipe.

CSA Farm Share Chopped Salad

This salad is filled with a variety of colors, flavors, and textures. A mixture of raw and cooked vegetables with grains, proteins, and herbs, this hearty vegetarian salad can be eaten as a main dish or used as a side salad.

Today I want to talk about maximizing time.

Do you bring reading material, knitting, or your laptop with you when you know you'll be sitting and waiting somewhere? I do--either my Kindle at the doctor's office, or my knitting in the car, or my laptop while waiting for my daughter's sewing class. I like to be prepared when I know I'll be stuck somewhere for a while.

It's amazing how much focused effort I can accomplish toward a task when I am free of the distractions of laundry, the dogs wanting out (and in and out and in and out and in), or the lure of social media.

This recipe came about precisely because I was stuck without preplanned waiting materials. We'd dropped the car off for routine maintenance first thing in the morning and decided to swing by the dealership eight hours later, en route home from an errand.

The car wasn't ready.

Grilled Cheese with Guacamole and Corn Salsa

Leftover guacamole is like a Christmas tree on the lot on December 26th.  No one wants it.  Sure, you can cover it with plastic wrap . . . or water (check out these terrific kitchen hacks) . . . to help with the oxidation, but the fact is it's a has-been.

Or is it?

I turned some game day leftovers into a yummy grilled cheese sandwich, and before Grilled Cheese month [who thinks of these things? Zucchini bread day?Apple turnover week?] ends I wanted to share it with you.

I'm glad to even the score between vegetarian grilled cheese sandwiches and those containing meat on this blog, as I think grilled cheese (and tomato soup) is one of those combinations that appeal to a wide variety of eaters.
Earlier this month we stopped for grilled cheese on the way home from a Spring break trip to have my phone stolen at the Museum of Science and Industry in Chicago. [Am I the only one who is scouting the opposite side of the road for places to eat on the way home when we've just barely embarked on a trip?]  We were surrounded by multigenerational families, couples, and individuals all enjoying a grilled cheese sandwich. [We stopped at Fair Oaks Farms and bought gooey grilled cheese sandwiches on bread that managed to be both soft and chewy--must investigate different kinds of bread for my sandwiches.]

I think I ranted enough about using your leftovers the other day with my Taco Rice Tortilla Pizza post.  Today I'd just like you to enjoy a tasty, if a bit messy, sandwich.  And rest assured I've got some other grilled cheese ideas kicking around for next April!

Sriracha Butternut Squash Hummus

I was trying to describe to a friend what a shake of sriracha brings to a dish.
"Well, it's heat.  But with flavor . . .  It doesn't burn your mouth like a really hot pepper, it doesn't numb your mouth like Szechuan peppercorns . . . it's just . . . heat.  But with flavor . . ."
[Clearly I suck at the whole food writing thing. Let me feed you instead.]  When I add a shake of sriracha chili sauce to vegetables, like my Soy Sriracha Roasted Mushrooms, happy things happen.  When Laura adds sriracha to vegetable muffins, StrangeButGood things happen.  I was in an experimental mood when I whipped up this batch of Sriracha Butternut Hummus for #AppetizerWeek.  I'd roasted one of the butternut squash in my Strategic Winter Squash Reserve (link to a photo on my FB page) and used half in Buffalo Butternut Hummus . . . but I had the second half beckoning me to play.

I like playing with the vegetables from my Community Supported Agriculture (CSA) farm share.  Getting a weekly box of fresh local vegetables means my family is more likely to eat vegetables.  It sounds silly, but just getting the produce into my kitchen is half the battle sometimes.  Figuring out what to do with them?  Well, that's why I created a Visual Recipe Index by Ingredient--so when I've got beets, kale, or peppers I can see several recipes for how to use them and pick which one suits my fancy.  Other folks who enjoy eating from a farm share agree, so I think I'm on the right track.

Buffalo Butternut Squash Hummus

Buffalo sauce-seasoned roasted butternut squash hummus makes a spicy vegetable addition to an appetizer spread.

When I think about game day snacks, Buffalo Chicken Dip is high on the list of essentials.  I've made 2 kinds of Buffalo Chicken pizzas (here and here). (My son will even cobble together a dip out of whatever he can find in fridge if I say 'No, I'm blogging about Corn and Black Bean Salsa in Avocado Cups and not making Buffalo dip!').  That's how much we like the flavor.

But what if your guests include vegans or vegetarians?  What if your guests include folks trying to rein in the tendency to overindulge and want more vegetable options?

Buffalo Butternut Hummus | Farm Fresh Feasts

I try to have something for a variety of eating styles on my appetizer spread, and I find I can't go wrong with vegetables.  For #AppetizerWeek I'll be sharing a variety of savory appetizers using seasonal vegetables, starting today with Buffalo Butternut Squash Hummus. Tomorrow I'll share a Harvest Sweet Potato salsa, coming on Wednesday I've got a Sriracha twist on this hummus, then I'll round out the week with a pair of puff pastry pizza appetizers--Pickled Pepper and Pepperoni Puff Pastry Pizza Pinwheels (say that 3x fast) on Thursday and Very Veggie Puff Pastry Pizza Bites on Friday. Whew, what a week!

This Buffalo Butternut Squash Hummus provides the spicy heat from cayenne pepper sauce coupled with the mellow smoothness of roasted butternut squash hummus.  It also makes a terrific base for a layered veggie appetizer in the style of my Five Layer Mediterranean Chicken Dip or Layered Summer Vegetable Appetizer. Customize this hummus any way you like.  Top it with sliced celery, crumbled blue cheese, and even chunks of chicken. Scoop it up with pita chips or celery sticks or pretzels or chicken fries.

The inspiration for this recipe came from my Strategic Winter Squash Reserve (link to the photo on my FB page)  As the Community Supported Agriculture (CSA) farm share season draws to a close, I begin to stockpile winter squash, sweet and white potatoes, onions, and garlic in a cold corner of my breakfast nook.  After all the fresh greens are consumed--and before I turn to the vegetables I've canned or frozen--my SWSR is our source for farm fresh food in the dead of winter.  I started with the hummus recipe from Farmer John's Cookbook: The Real Dirt on Vegetables (Amazon affiliate link) and added my twists based on what I thought my family would enjoy and what we had on hand.

Chicken/Blueberry/Hummus vs Pepper/Peppadew Pizza (Pizza Night)

Last Friday Night Pizza Night, I shared with you a poem I wrote to my pizza stone.

You probably thought I was a bit addled.  Correct!

In the interest of adding value to the post, I also shared my Roasted Garlic and Herb pizza dough, a dough that I think is not a copycat but better than Trader Joes Garlic Herb Pizza dough.

I promised this week that I'd share what I'd done with that dough, and I provided you with a teaser photo:

The pizza on the left has hummus, chicken, blueberries, goat cheese and red onion.  The pizza on the right has colorful bell peppers and Peppadew peppers.  Totally not clear to me if I need to put a ® or ™ symbol with that, so there they are if necessary.

I thought I would choose one to share today.

I try to balance meat-including pizzas with suitable-for-vegetarian pizzas, but to be perfectly frank, I've been kinda distracted lately.  My spouse is embarking on his Asian/Greater Middle East adventure du jour  d'année, my kids each had a concert to perform, and we were fortunate to have both grandmas and my dad in attendance which means I've had company for 4+ days.  So instead of writing up all about a pizza, with links all around, I've just realized that Friday's blog post should go live in 6 hours and I've not written spit!  This is not my usual M.O.. (should there be a 2 punctuation marks there?) Normally I write it all out in longhand, research where I want to link to, type it up, and days/weeks/months later, the night before it goes live, I double check everything and hit publish.  And I'm drinking tea while I write, not hard cider while I type.

Imagine my surprise when I realize that I don't have a pre-written pizza post at 8 pm on Thursday night!  I do, however, have great kids--one's walking the dog, the other is cleaning up from dinner, so I can grab my photos and dump out the contents of my brain so that you've got a pizza inspiration. Some day I'll share about the lovely man at the fancy cheese counter who gave me a sample of Peppadew peppers, thereby inspiring me to actually purchase some Peppadew peppers to have on hand for this pizza. Another time I'll share about the inspiration for this pizza, Heather's Strange But Good flatbread.  But after I finish typing this, since I've been up visiting until midnight for several nights in a row, stick a fork in me--I'm done.

If you have a hankering for pizza and do eat meat, grab some blueberries, hummus, goat cheese, chicken and red onion and make the pizza on the right.  If you're not into meat (these days), grab some bell peppers and Peppadews (Peppadews?  is that even a word?) and make the one on the left.  As always, please check out my Pizza Primer for really well-thought out not off-the-cuff-hard-cider-influenced pizza making instructions. Guess what? My folks' flight is now delayed, they are heading back here to spend the night, so perhaps Mom will proofread--she's great at that--and this post will be better tomorrow after an update.
